Cream Cheese Swirl Brownies

What do you do when your state has a driving ban and you're snowed in for the weekend? Bake!

I literally just took these sweet little babies out of the oven and decided to share a quick recipe with the rest of you New Englanders that are trapped in the blizzard! And of course, even for those that aren't in New England, because let's face it - brownies are always good! Also, it was my first time making brownies from scratch and I was a little nervous but I found the recipe here through my pinterest and trust me, it is super easy! Enjoy!!

Cream Cheese Swirl Brownies
Serves: 20  ( by 20, I think they meant four)
Ingredients
  • CHOCOLATE BROWNIES:
  • 113 g (1/2 cup, about 8 Tbsp) butter, melted
  • 1 cup sugar
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • a pinch of salt
  • 2 eggs
  • 3/4 cup all purpose flour
  • CHEESECAKE TOPPING:
  • 125g cream cheese, room temperature (No idea what that meant, so I threw in one package)
  • 1/4 cup sugar
  • 1 egg
  • 1/2 tsp vanilla extract
Instructions
  1. Preheat the oven to 180 C (350 F). Butter and line a 20 x 20 cm (8 x 8 inch) pan.
  2. BROWNIE LAYER: In a large bowl, combine melted butter with sugar, vinegar, vanilla extract and salt. Whisk in the eggs. Gently fold in the flour and cocoa. Pour the mixture into the prepared pan, reserving 1/4 of a cup of this batter for the swirling effect.
  3. CHEESECAKE TOPPING:
  4. In a small bowl, mix cream cheese, sugar, egg and vanilla. Spread this mixture over the top of the brownie batter. Randomly drop teaspoons of the reserved brownie batter on top of the cream cheese layer. Using the tip of a knife, swirl through the white layer to create a swirl effect.
  5. Place in the preheated oven for 30-40 min. Allow brownies to cool completely. (HA!)

Ta-dahhh!! Pair with ice cream, wine, or just eat them bite by bite while you're supposed to be cutting them for your family...  However you like! Let me know how yours come out!!

    1. Really, vanilla? I thought for sure I'd stump people on the cocoa powder. haha Gotta stock up on those ingredients so you can be ready when the next post comes girlie!! lol
